I love mini food!

I just love the idea of mini food, it's easier to eat, it's cuter and when you want a little bit of everything it's a lot easier to feel okay when everything is mini!

So I was on Pintrest doing what I do everyday look at amazing things to eat, and found this picture of mini fruit pizzas! I could not believe I never thought of doing this before!  I had a potluck at work and decided it was a great time to make them, everyone enjoyed them and I had none to bring home sadly.

Using a mini muffin pan and pre-made cookie dough, this recipe comes together quickly!

Preheat oven to the temp. on the cookie dough package, I used 1 package of Pillsbury sugar cookie dough.  Cut the cookie dough into 24 pieces, roll into a ball and place in a mini muffin pan that has been sprayed with cooking spray.

Bake the cookie cups for about 8 minutes, keeping an eye on them, they might need 10 minutes.

Allow the cookie cups to cool completely before trying to take them out then and make the filling.  For this recipe I pretty much just used the normal filling I would use for a regular fruit pizza which is

1 package of cream cheese (8 oz.)
1/4 cup of sugar
1/2 tsp. of vanilla

Mix ingredients with a blender, put the mixture in a piping bag or a zip lock bag for easy filling.

After you fill all the cups top with your choice of fruit, I used strawberries, blueberries, grapes and kewi.
